About the Gabardier
The Gabardier takes its shape from the gabares, the flat-bottomed oak boats that worked the Dordogne for centuries. The largest were around 30 meters long and carried up to 60 tonnes: wine from Bergerac down to Bordeaux, timber, stone and walnuts, and now and then a cargo that never saw a tax collector.
It is a Thiers-Issard design with an 11 cm Sandvik 12C27 stainless blade, Le Gabardier on the blade and G.R. on the ricasso.

Care
- Wipe the blade clean and dry after use, especially after cutting fruit or cheese.
- Put a drop of oil in the joint between blade and spring about once a month.
- Keep wooden and horn handles away from long soaking; a little oil now and then keeps wood lively.
- Hone the edge on a fine stone or ceramic rod.
